More Sunday baking! I had some overly ripe bananas that were on the verge of being chucked, but instead I made these delicious babies:

Vegan Banana Walnut Carob Chip Muffin Checklist (Makes 10-12)
[ ] 3 very ripe bananas
[ ] 1/4 cup of vegan margarine, softened
[ ] 3/4 cup turbinado sugar
[ ] 2 cups whole wheat flour
[ ] 1 tsp salt
[ ] 1 tsp baking soda
[ ] 1 cup chopped walnuts
[ ] 1/2 cup carob chips (or any vegan semi-sweet chocolate chips)
Prep
[ ] Preheat oven to 360ยบ F
[ ] Mash bananas and margarine together
[ ] Add sugar, flour, salt, baking soda and mix well (preferably w/ electric beater)
[ ] Add walnuts and carob chips and mix manually
[ ] Aliquot 2/3 of batter for each muffin on the non-stick muffin pan
[ ] Bake for approximately 25 minutes; check with toothpick
[ ] When done, place on baking rack to let them cool down

Vegan Banana Walnut Bread
Good evening! Tonight I made some delicious vegan banana walnut bread. I borrowed the recipe from here.
Vegan Banana Walnut Bread Checklist (1 loaf, 10-12 servings)
[ ] 3 medium-small bananas, mashed
[ ] 1 cup of turbinado sugar
[ ] 1/2 cup of canola oil
[ ] 1 1/2 cups whole wheat flour
[ ] 1 tsp. baking soda
[ ] 1/2 tsp. cinnamon
[ ] 1/2 cup walnuts, chopped
Prep
1. Pre-heat oven to 350°
2. In a large bowl, mix mashed bananas, sugar and oil.
3. Add flour, baking soda and cinnamon to wet batter and mix well. Add walnuts last.
4. Pour into an non-stick loaf pan and bake for 55-65 minutes (or until a knife comes out dry).
